Marmajuelo from Borja Pérez’s Ignios Orígenes is a striking white wine from D.O. Ycoden-Daute-Isora, Tenerife, made 100% from the native Marmajuelo grape grown on volcanic, franco-sandy soils at around 380–400 m altitude. It is fermented in used 500-litre French oak barrels with indigenous yeasts, then aged in those same barrels for one year. The wine has a deep golden hue and offers an expressive nose of white fruits, aromatic herbs, balsamic touches, almond blossom, and honey. On the palate it is rich, unctuous and textured yet maintains freshness through lively acidity; there is also a mineral component, a long finish, and a personality that reflects its terroir.
