From the unmistakable territory of the Maremma Toscana comes this Vermentino Cobalto, produced exclusively from Vermentino grapes. The vineyards, located 150 metres above sea level, are rooted in soils rich in decomposed sandstone. The grapes used for this wine are the result of a meticulous selection from the estate’s best parcels.
Following harvest, the grapes are gently pressed and fermented for two weeks at a controlled temperature of 15°C. Vinification takes place in a combination of vessels: 50% in wood, 34% in amphora, and the remainder in stainless steel. The wine is then aged on its lees for 10 months, before a further minimum of 6 months of bottle ageing.
