One of the boldest and most fascinating expressions of Savagnin, The Macéré is vinified like a red wine: the grapes ferment with their skins for two weeks, reaching temperatures of up to 30°C. This skin maceration reveals the grape’s more tactile and structured side, while preserving the vibrancy and energy typical of the Jura.
The wine is aged in used Burgundy oak barrels, with a small portion in stainless steel. The result is a deep, textured white with slight natural turbidity, offering notes of orange peel, dried spices, chamomile flowers, and a well-defined salty finish. A distinctive Savagnin, yet absolutely true to its terroir.
