After a few hours in a refrigerated space, the grapes were destemmed and cold-soaked on their skins for four days. They were then gently pressed into stainless steel tanks and vinified at relatively warm temperatures to achieve supple extraction while retaining the fruit’s freshness. The wine subsequently spent six months in used 500L French tonneaux, adding subtle structure and softening the profile. It was then racked to stainless steel, blended, and left to settle for three months prior to bottling.
This dark garnet wine displays aromas of ripe plums, leather, garrigue and pepper. On the palate, it offers ripe black cherry with a hint of candied berry, finishing with fruit sweetness and a touch of licorice, supported by soft, gripping tannins that hold the wine together.
