With the Vadio Rosé Sparkling Wine, we aim to showcase the versatility of the berry. Grapes are sourced from a 30-year-old vineyard farmed by a small grower, where limited vigour prevents excessive maturation and ensures naturally high acidity.
Whole bunches are pressed with very gentle extraction, followed by fermentation in both stainless steel and used barrels. In February, the wine is blended and the tirage carried out. After the second fermentation, the wine rests on the lees for a minimum of 18 months before disgorgement.
The result is a delicate sparkling rosé with a light salmon colour and a fine, persistent mousse. On the nose, it displays abundant fresh red-fruit aromas. On the palate, it reveals vibrant acidity balanced by the creaminess of the mousse, delivering both freshness and elegance.
