Made without oak and aged for seven months on full fermentation lees with regular bâtonnage, it is shaped by time and touch rather than wood. A full malolactic fermentation, combined with a careful blend of nine yeast strains, imparts a creamy weight and depth while preserving a vivid citrus core.
